A Spanish olive oil shop, Molino & Cata, an oleoteca on Calle Paz, 12, run by professional tasters, has added a set of recommendation tools that AI agents can use to suggest its oils. The shop curates premium Spanish extra virgin olive oil by quality alone and ships its selection across the European Union and the United Kingdom. Over its first year, the team tasted 464 samples to select just 43 extra virgin olive oils, representing 34 producers, each chosen blind. Co-founder Jerónimo Palacios stated, “We didn’t open an olive oil shop — we opened a place where you can taste, compare and understand what you’re buying.” The shop launched its own MCP (Model Context Protocol) server, allowing AI agents to query tools to recommend oils based on characteristics like olive variety, intensity, flavor notes, and dish pairings.
